Finally we have our delicious, sweet and tender asparagus at The Old Strathcona Farmer's Market 8:00 AM - 3:00 PM and the City Market Downtown on 104th. St. 9:00 AM - 3:00 PM this Saturday May 30, 2009.

Asparagus and asparabuggyWe are picking !!

Here is a picture of one of our three "Asparabuggies" that move us slowly down the field as we hand pick the asparagus. The wonderful, hard working ladies in the photo are l - r Joanie, Jackie & Lisa. The soil temperature is warm enough now that the asparagus is growing very well now. The first few days of picking always produce the best yields so supply at the markets should be very good this weekend.

A favorite recipe

We served this dish at the "Country Drive" media launch the other day and Julie, a food writer, author, stylist, journalist, food and nutrition columnist on CBC radio and co-host of a TV cooking show (It's Just Food on Access and CLT) was in attendance. Cold Asparagus with Sesame-Ginger Vinaigrette

A simple and different delicious side dish. Excellent!

1 lb. Edgar Farms fresh asparagus

1 Tbsp. toasted sesame seeds*

1 garlic clove - crushed

1 tsp. fresh ginger - grated

2 Tbsp. rice vinegar

2 Tbsp. orange juice

2 tsp. soy sauce

2 Tbsp. vegetable oil

¼ tsp. red chili flakes

¼ tsp. sesame oil

*To toast sesame seeds, put them in a small skillet and heat, stirring frequently, until fragrant and just golden. Watch carefully. Bring lightly salted water to boil in a medium skillet, add asparagus and cook for 5 minutes or just until tender-crisp. Immerse asparagus in ice-water to stop the cooking action. Pat dry and arrange on a platter. In a blender, combine the dressing ingredients (reserving half of sesame seeds) and blend until thoroughly combined. Pour dressing evenly over asparagus, sprinkle with reserved sesame seeds and serve. Serves 4

Can you freeze Asparagus?

This is a question that is frequently asked. My answer is that is it certainly can be frozen, but it is not as good as fresh. My son-in-law, Steve really likes it frozen. My favorite way of preserving our Asparagus for the long, cold winter ahead is to make soup and our big bags of seconds are great for this. Pick up a copy of our brochure for our soup recipe as well as how to freeze it.

Other happenings on our farm Baby Calves

Along with our asparagus we have a traditional grain and cattle farm. May 24 is the date that we usually turn our cows and calves out to pasture, but it is so very dry that we are still waiting for a nice gentle rain to bring on the grass so that we can put our cows out to pasture.
